Tofu Scramble
Preparation
Option 1:
Slice the tofu and place it in a blender along with the other ingredients (except for the wild garlic). Blend thoroughly until smooth, then pour the mixture evenly into a non-stick pan misted with olive oil spray, similar to a pancake. Let it set over high heat, then gradually and carefully turn it. Sprinkle in the chopped wild garlic and continue to toss it together. Be patient, as this requires a bit more time to cook through than regular eggs.
Serve with fresh vegetables and reform bread.
Option 2:
Omit the water and simply mash the tofu with a fork, mixing it with the Vegan crema and spices. This results in a less creamy, more textured consistency—a great option if you prefer a heartier bite.
