Strawberry Pie
Preparation
- Preheat the oven to 180 °C.
- Lightly grease a pie dish or a small baking tray with margarine.
- Brush each sheet of phyllo pastry with melted margarine, then layer them into the dish so that the edges overhang slightly.
- For the filling, mix the Vegaföl, eggs, powdered erythritol, lemon zest, vanilla pudding powder, and ground vanilla until smooth.
- Pour the cream into the center of the pastry sheets and smooth it out.
- Arrange the strawberry slices on top.
- Fold the overhanging pastry edges back over the filling, brush them with a little margarine, and then scatter the handful of flaked almonds on top!
- Bake for 35–40 minutes until the pastry is golden brown and the filling has set.
- Let it cool completely, then slice and serve.
- Tip: it can also be made with blueberries
