Strawberry Pie

Preparation

  1. Preheat the oven to 180 °C.
  2. Lightly grease a pie dish or a small baking tray with margarine.
  3. Brush each sheet of phyllo pastry with melted margarine, then layer them into the dish so that the edges overhang slightly.
  4. For the filling, mix the Vegaföl, eggs, powdered erythritol, lemon zest, vanilla pudding powder, and ground vanilla until smooth.
  5. Pour the cream into the center of the pastry sheets and smooth it out.
  6. Arrange the strawberry slices on top.
  7. Fold the overhanging pastry edges back over the filling, brush them with a little margarine, and then scatter the handful of flaked almonds on top!
  8. Bake for 35–40 minutes until the pastry is golden brown and the filling has set.
  9. Let it cool completely, then slice and serve.
  10. Tip: it can also be made with blueberries
