Rice Paper Mochi
Preparation
Mix the natural Vegagurt with the diced fruit, vanilla extract, and sweetener of your choice. Dip the rice paper into lukewarm water for a few seconds, then place it on a clean surface. Scoop the fruit-yogurt filling into the center in a rectangular shape, then fold up all four sides of the rice paper to wrap it tightly. Place the prepared rice paper mochi in the freezer and let it set completely. Before serving, you can optionally dust it with powdered erythritol or matcha powder. Matcha powder pairs particularly well with the mango version, while powdered erythritol is a great match for the strawberry or blueberry varieties.
