Deep-fried Stuffed Eggs with Vegajo Wild Garlic Cream
Preparation
- Boil the eggs until hard, then peel and cut them in half lengthwise.
- Carefully remove the yolks and place them in a bowl.
- Add the Vegajo ramsons-flavored cream and a pinch of salt, then mix until creamy.
- Bread the egg whites before filling:
- first, coat them in psyllium husk flour,
- then dip them in beaten egg,
- finally, coat them in whole wheat breadcrumbs.
- Fry the breaded egg whites in an air fryer until golden brown, then place them on a paper towel.
- Transfer the cream into a piping bag and pipe it into the center of the fried egg whites.
Vegetable side dish (cauliflower “rice”)
- Finely chop the garlic.
- Dice the bell pepper and grate the carrot.
- Start sautéing the garlic in a pan with a little oil.
- Add the pepper and carrot, and sauté together for a few minutes.
- Pulse the cauliflower in a food processor until it reaches a rice-like consistency.
- Add it to the vegetables, season with salt, and sauté for a few minutes until ready.
