Blue Lemon Bliss Bars
Preparation
Place the thoroughly washed lemon into a high-powered food processor or blender. (Ensure it is powerful enough to process the seeds as well.) Add the cubed tofu, plain Vegagurt, sweetener, and Vanillin.
Blend until smooth, then spread the mixture into a chosen mold, smoothing it out so it can be cut into 6 equal bars.
Next, for the topping, blend the natural peanut butter with the water, sweetener, and blue spirulina, then spread it evenly over the base. Let it rest in the refrigerator overnight. Before serving, cut into equal portions and garnish with lemon slices.
