Deep-fried Stuffed Eggs with Vegajo Wild Garlic Cream

Preparation

  1. Boil the eggs until hard, then peel and cut them in half lengthwise.
  2. Carefully remove the yolks and place them in a bowl.
  3. Add the Vegajo ramsons-flavored cream and a pinch of salt, then mix until creamy.
  4. Bread the egg whites before filling:
    • first, coat them in psyllium husk flour,
    • then dip them in beaten egg,
    • finally, coat them in whole wheat breadcrumbs.
  5. Fry the breaded egg whites in an air fryer until golden brown, then place them on a paper towel.
  6. Transfer the cream into a piping bag and pipe it into the center of the fried egg whites.

Vegetable side dish (cauliflower “rice”)

  1. Finely chop the garlic.
  2. Dice the bell pepper and grate the carrot.
  3. Start sautéing the garlic in a pan with a little oil.
  4. Add the pepper and carrot, and sauté together for a few minutes.
  5. Pulse the cauliflower in a food processor until it reaches a rice-like consistency.
  6. Add it to the vegetables, season with salt, and sauté for a few minutes until ready.
