Sweet Potato Wrap
Preparation
Using a mandoline slicer, cut the sweet potato into uniform, thin slices. Arrange the sweet potato on a baking sheet lined with parchment paper so that the slices partially overlap.
Grate the Vegajó Plain and distribute it evenly over the top. Bake at 180-200°C for 30 minutes using the gratin setting (if you don't have this function, the top and bottom heating setting will work just fine). Once the base is ready, fill it lengthwise with your chosen toppings, drizzle with the dressing, and roll it up tightly.
If you want to make a snack, divide it into 6 portions. If you are eating it as a main course, prepare a large serving of fresh salad on the side and divide it into 3 portions.
