Sushi Sandwich

Preparation

Thoroughly rinse the quinoa, then cook it in 1.5 times the amount of water with a pinch of salt until soft.

Let it cool completely, then add the rice vinegar and mix it in thoroughly.

Slice the fresh salmon into thin strips and marinate them with a drizzle of lemon juice, salt, and pepper.

Place a medium-sized ring mold in the center of a nori sheet. Layer half of the cooked quinoa inside, followed by cucumber slices, 10 g of Plain Cream, half of the salmon, the avocado, and another 10 g of Plain Cream. Fold the corners of the seaweed sheet toward the center, using 5 g of Plain Cream to seal them together.

Wrap the bundle in a second nori sheet, sealing it again with a bit of Plain Cream or water.

Lightly toast the resulting "sandwich" in a non-stick pan until crispy.

Repeat the process to make the second sushi sandwich.

Sprinkle sesame seeds on top of the toasted sandwiches before serving.
