Salmon Spaghetti Salad

Preparation

Prepare the vegetables: dice the cucumber, cut the carrot into thin strips, slice the green onion, and shred the iceberg lettuce. Dice the salmon, season with salt and pepper, and cook until crispy in an air fryer. Cook the pasta according to the package instructions. If following a gluten-free diet, choose gluten-free pasta; otherwise, you can use a whole-grain version. For the dressing, mix the Vegaföl with the soy sauce, adding a little water if you prefer a thinner consistency.

Layer the ingredients in a bowl or a mason jar: start with the pasta at the bottom, followed by the cucumber and pink sushi ginger, then the crispy salmon, green onion, iceberg lettuce, and carrot. Pour the dressing over the top. This is a perfect choice for busy days, as it can be prepared in advance and taken with you. Before eating, simply turn it out into a bowl or shake it up in the jar.
