Forest Fruit and Nut Ice Cream (made from zucchini)
Preparation
Peel the zucchini, drop it into boiling water, and blanch for 1 minute.
Freeze the blanched zucchini.
Blend the frozen zucchini with the forest fruit mix and all the remaining ingredients until smooth.
Pour the mixture into a bowl and let it set in the freezer. This recipe makes approximately 3 servings.
