Creamy Plum Soup with Cinnamon Dressing
Preparation
1. Preparing the Plums Wash the plums, remove the pits, and cut them in half. Place them in a pot and start to boil. Add the lemon juice, sweetener, and a pinch of cinnamon. Cook until the plums are completely soft (about 10 minutes). Blend until smooth using an immersion blender.
2. Thickening Mix the pudding powder with a little cold water and the Vegan crema. Pour this into the pot. Simmer over low heat until the soup reaches a creamy consistency.
3. Cinnamon Dressing Mix the Vegan crema with the sweetener, cinnamon, and a little water to create a thick dressing.
4. Serving Serve the soup chilled. Garnish the top with fresh plum pieces and drizzle with the cinnamon dressing.
Tip: Instead of the cinnamon dressing, you can garnish with toasted almonds or granola. You can also roast the garnish plums in an AirFryer at 180°C for 10 minutes with a bit of cinnamon!
