Cottage Cheese Style Dumplings
Preparation
- Cooking the base: Pour the coconut milk or water into a small pot. Add the salt, sweetener (erythritol), and oat semolina. Cook over low heat, stirring occasionally, until you get a thick, heavy mass.
- Adding the Vegajó Cottage: When the oat mixture has cooled to lukewarm, add the Cottage, grated lemon zest, and lemon juice. Mix thoroughly until smooth and uniform.
- Chilling the mixture: Let it cool, then work it together by hand to achieve an even texture. Place it in the refrigerator for at least 1 hour (the longer it rests, the better the consistency will be).
- Shaping the dumplings: Shape the mixture into dumplings with wet hands. Heat the coconut oil in a pan and toast the breadcrumbs until golden. Roll the dumplings in the toasted crumbs.
- Serving: Serve with the sweetened Vegan crema and some fresh fruit, such as blueberries.
