Cottage Cheese Strudel
Preparation
- Mix the Vegajó Cottage with the vanilla oat pudding, psyllium husk flour, lemon zest, vanilla extract, egg, and sweetener.
- If desired, stir in a handful of raisins as well.
- Lightly brush each sheet of phyllo pastry with melted plant-based butter, then stack them on top of each other.
- Spread the filling in a single line along the edge of the pastry.
- Roll it up carefully, then brush the top with plant-based butter too.
- Bake in an oven preheated to 210 °C for about 25 minutes until nice and golden brown.
- Let it cool for a few minutes before serving, then dust with powdered erythritol and offer.
