Coconut Strawberry Bars

Preparation

Mix the ingredients for the base (vegan cottage, shredded coconut, lemon juice, sweetener, vanilla flavoring) thoroughly until combined. Divide the mixture into 9 equal portions. On baking paper, cling film, or aluminum foil, flatten each portion. Place finely chopped strawberry pieces in the center of each. Then roll them up, shape into small bars, and adjust by hand to make them neat.

Place the bars in the freezer and let them firm up. Once firm, coat them in melted sugar-free dark chocolate. The chocolate will set quickly, so they are ready to eat!
