Quinoa falafel
Preparation
Rinse the quinoa and boil it for 16 minutes. Once cooked, place it in a blender. Chop the leeks and parsley. Add all the ingredients to the quinoa and blend until combined. Let the mixture firm up in the freezer for 10-15 minutes. Shape into balls and bake in an Air Fryer at 200°C for 35 minutes until done. Serve on a bed of cauliflower puree with a fresh salad.
