Bolognese Quinoa Burrito
Preparation
Soak the quinoa thoroughly, then drain the excess water. Blend it with the Vegan crema, water, and seasonings into a smooth batter. You can cook 7 tortilla sheets from this mixture in a non-stick pan.
While the tortillas are cooking, prepare the ragu. Sauté the onion with the seasonings, then add the meat (or meat substitute). Brown it thoroughly, then pour in the plain tomato sauce. Season again if necessary and let it simmer until thickened.
Once the ragu is ready, fill the quinoa tortillas, roll them up, and place them individually into a baking dish. Drizzle with the remaining ragu, distribute the grated Plain on top, and bake at 200°C for 15 minutes until the cheese melts.
Serve with a fresh salad.
