Vegajó French Salad

Preparation

Cook the beets and carrots. Add the diced tofu, Vegan crema, and spices to the cooked and cooled vegetables, then puree them.

If you prepare it in a food processor, as I do, you need to turn it over several times to ensure it blends evenly.

Mix the resulting mass with psyllium husk, then place it into a piping bag.

Shaping the sausages: pipe the mass onto plastic wrap, roll it up tightly, and tie it securely by twisting the ends in opposite directions.

Cook in boiling water for 14 minutes. Then place in ice water; after it has completely cooled and solidified, roll it in a non-stick pan to brown all sides.

Perfect for hot dogs too!
