Dubai chocolate flavored Christmas cookie
Preparation
Add the psyllium husk to the oat flour and mix thoroughly. Then add the Cottage and the sweetener mixed with the orange juice, and knead everything well.
Don't be surprised if the dough seems crumbly at first; work the dough again, knead the edges together, and roll it out. Then, use a round cutter to form even discs and bake them at approximately 170–180°C for about 12 minutes. (Baking time may vary depending on the oven.)
For the pistachio cream, grind the pistachios, add the Vegan crema, the sweetener, and the scraped seeds of the vanilla bean, and blend until creamy. Melt the sugar-free dark chocolate and chop the pistachios. Once the discs are baked and cooled, fill them with the pistachio cream.
Top them with the melted sugar-free dark chocolate and the pistachio pieces.
