Preparation

1. Preparing the Cocoa Dough Beat the eggs with the erythritol using a mixer for at least 10 minutes until you reach a creamy, frothy consistency. Add the melted coconut oil and the plant-based drink. Mix the dry ingredients (flour, cocoa powder, baking powder) together, then gradually add them to the egg mixture. Stir until smooth to get a medium-thick, pourable batter.

2. Preparing the Vegajó Cream Mix the Vegajó cottage with the rest of the filling ingredients.

Assembly: Line an 18 cm cake pan with parchment paper. Pour in the cocoa batter and smooth it out. Spoon the cottage cream onto the top in large spots to create the "spotted cow" pattern.

3. Baking Bake in a preheated oven at 180°C for approximately 30–35 minutes. If the top starts to brown too quickly, cover it with parchment paper. Check with a toothpick: the inside of the cocoa part should not be raw.
