Vegajó “Saddle of Venison” Salad

Preparation
1. Preparing the vegetables
● Steam the French salad vegetable mix, then let it cool.
● Add the finely chopped pickled cucumbers and the apple.

2. Making the dressing
● Mix the Vegajó Vegaföl and the plain Vegajó Vegagurt.
● Add 1 egg, lemon juice, mustard, salt, pepper, and sweetener, then blend thoroughly until smooth.
● Taste it – it should be slightly tart and piquant.

3. Preparing the gelatin
● Dissolve the gelatin in 1.5 dl of hot water and let it cool slightly (it should not be hot, but still liquid).

4. Assembly
● Combine the vegetable mix with the dressing.
● Carefully add the lukewarm gelatin and mix quickly.

5. Molding
● Line a "saddle of venison" mold (loaf pan) with plastic wrap (this makes it easier to unmold).
● Smooth 3/4 of the mixture into the mold, place the hard-boiled eggs on top, then cover with the remaining mixture. Chill in the refrigerator for at least 4-5 hours, but ideally overnight.

6. Serving
● Turn it out of the mold and slice it.
● Serve cold as a salad or a side dish.

Tips
● If you want it even richer: you can add corn or ham.
