Gyros-style Sweet Potato Bowl
Preparation
Wash the sweet potato, then bake in an Air Fryer at 200°C for 30-40 minutes until tender. Coat the turkey breast with the spices and cook in the Air Fryer until done.
Meanwhile, prepare the tzatziki: grate the cucumber and mix it with the vegan sour cream, garlic, salt, and pepper. Chop the vegetables.
Once the sweet potato is ready, cut it in half and gently mash the inside.
Top it with: romaine lettuce, the roasted meat, tzatziki, tomato, and onion. You can add fresh oregano on top. For a juicier finish, drizzle with a little lemon juice at the end.
