Diet Valentine Slice – made from lentils
Preparation
Soak the red lentils in advance, then rinse them very thoroughly. Place them into a blender, add the cocoa powder, sweetener, rum flavoring, baking powder, plant-based yogurt alternative, vegan chocolate protein powder, and water, then blend until completely smooth. Melt the sugar-free dark chocolate and gently fold it into the mixture together with a pinch of salt.
Spread the batter into a baking tray lined with parchment paper, then bake at 150–180°C (302–356°F) for about 15 minutes, until done (check with a toothpick). Let the base cool completely. Meanwhile, whip the almond whipping cream, add the finely chopped strawberries, sweetener, plant-based cream, and cinnamon, then mix until smooth and creamy.
Cut the cooled sponge into 25 equal squares, leave them next to each other, spread the cream on top, then decorate with strawberries, blueberries, and grated sugar-free dark chocolate. Once you lift out the slices, they are ready to be served.
