New Year’s Lentil Salad
Preparation
Thoroughly wash the lentils, then cover them with water, add the bay leaves, and boil until tender. Chop the vegetables. Seed the pomegranate and cut the White Cube into pieces. Dice the sweet potato into small, uniform cubes, season with salt and pepper, and bake in the oven at 200°C for 10-15 minutes until done.
Once everything is prepared, assemble the salad: combine the iceberg lettuce with the carrots, boiled red lentils, roasted sweet potatoes, pomegranate seeds, and White Cube. Add the seasonings: salt, pepper, chives, and thyme.
Toss everything together thoroughly, then drizzle with the orange juice.
