Red Lentil Pasta Salad

Preparation

Dice the red onion and start sautéing it. Add the diced chicken breast, zucchini, and seasonings. Cook until the meat is tender and the vegetables are soft. Meanwhile, cook the red lentil pasta according to the package instructions.

Mix the Vegan crema with the mustard, water, salt, and pepper to create the dressing. Once the pasta is cooked, rinse it thoroughly with cold water.

In a large bowl, combine the spinach, the cooled pasta, the chicken ragout, and the hazelnuts. Pour the dressing over the mixture.

Toss everything together thoroughly and serve, topped with leek sprouts.
