Golden Dumplings-style “Cottage Cheese Dumplings”
Preparation
Mix the vanilla pudding powder with a small portion of the coconut milk until lump-free. Add the sweetener, then add the remaining coconut milk and cook until thick and smooth. Divide into two portions and let them cool.
Add the protein powder and the Cottage to one half, and knead until it reaches a uniform consistency.
Cover the other half with plastic wrap and let it sit; this will be the sauce.
Place the walnuts, oatmeal, and vanilla erythritol into a food processor and grind them together.
After letting the dumpling base rest in the refrigerator, form medium-sized dumplings by hand (9 pieces in total).
One serving consists of 3 dumplings.
Roll the dumplings in the walnut mixture, then serve drizzled with the vanilla sauce.
