Veganuary Coconut Cubes
Preparation
- Preparing the dry baseIn a bowl, mix the flour blend, salt, sweetener, and the Kotányi Gingerbread spice mix.
- Adding wet ingredientsAdd the Vegajó Vegaföl (mixed with lemon juice) and the plant-based beverage gradually to the dry mixture. Stir until you have a smooth, lump-free batter.
- Microwave bakingPour the batter into a microwave-safe, heat-resistant dish. Bake at 800W for approx. 4 minutes until the batter sets and reaches a sponge-cake consistency. Let it cool on a rack for a few minutes, then cut into cubes.
- Making the chocolate glazePlace the erythritol, cocoa powder, and water in a small pot or bowl, then heat in the microwave until you get a smooth, silky glaze.
- Coating
- Dip the honey-spiced sponge cubes one by one into the chocolate glaze, then roll them in shredded coconut.
Tip
- If you prefer them juicier, you can dip the cubes into the glaze twice.
- Sprinkle some of the Kotányi spice mix onto your coffee as well!
